#WFD – Roasted salmon fillet with tomato sauce

Serve fish topped with sauce, accompanied by tossed salad of rocket and cherry tomatoes with 1 tbsp. olive oil.

POLOKWANE – Loaded with nutrients which can reduce risk factors for several diseases, Salmon is considered one of the most nutritious foods on the planet.

What’s for Dinner suggests trying out this interesting combination of juicy salmon fillets with a Mediterranean inspired tomato sauce that is full of natural flavour.

Ingredients

  1. 1 garlic clove
  2. 600g salmon fillets
  3. tbsp lemon juice
  4. 1 x KNORR Naturally Tasty Spaghetti Bolognese Recipe Mix
  5. 400g 1 can chopped tomatoes
  6. 150g cherry tomatoes
  7. 150g fresh rocket leaves

Method

  1. Preheat oven to 200°C.
  2. Rub salmon fillets with melted margarine mixed with lemon juice and garlic.
  3. Season with freshly ground black pepper.
  4. Roast for 8-10 min.
  5. Meanwhile mix the contents of the sachet of Knorr Naturally Tasty Spaghetti Bolognese Recipe Mix with tomatoes and place into a pot.
  6. Bring to a boil, reduce the heat and simmer for 10 min.
  7. Serve fish topped with sauce, accompanied by tossed salad of rocket and cherry tomatoes with 1 tbsp. olive oil.
