#FridayBraaiDay: How to braai a steak to perfection and more

This week two Randfonteiner's share the #BraaiMaster title.

This #FridayBraaiDay we spoke to Manny ‘Blou Bul’ Pereira from Tony’s Meat Market.

Manny shared with the Herald what he braais while watching his favourite rugby team – the Bulls.

Incidentally, the Bulls will be taking on the Chiefs tomorrow at 8.30am in the sixth round of the Vodacom Super Rugby.

Manny Pereira with the rump steaks and lamb chops he said are perfect for a rugby match.

Manny, being the owner of a butchery, fetched everything out of his store that he would use to braai before or during a rugby match.

Manuel’s braai pack:

• 2kg pork loin ribs

• A pack of pork rashers

• 15 lamb chops

• 3 small packs of boerewors

• 2 thick rump steaks

“I really have a problem when it comes to braai’ing. You have to go all out. You just have to cater. This braai pack can feed me and a couple of friends – big,” he said. In fact, it could probably feed a small village on a remote island.

While all his other meats require standard braai preparation, his rump steaks (even though there are only two) are braaied briefly over medium coals and then cut up into strips.

Simoné Degenaar, the home meal replacement chef at Tony’s, also shared how she would make a simple but delicious steak.

Lamb chops are one of Manny Pereira’s favourite things to braai.

Method:

Mix lemon juice, garlic, black pepper and coarse salt in a bowl. Marinade the meat for for approximately 30 minutes in this mix, and then put it over a medium fire. Braai to your preference.

Simoné said the most important thing about braai’ing a steak is making sure the coals (or fire) is not too hot. She said it should be medium at most.

While meat is important, Manny said a braai is not just about meat. He said nothing goes better with a braai than fresh rolls or fresh special breads.

He subsequently showed the Herald the inside of his bakery, pointing out his favourite hamburger rolls and special cheese breads that go perfectly with a braai.
