Gourmet braaibroodjies for your pleasure

Not in the mood for a meaty braai? Make some braaibroodjies.

Braaing is not just a thing people do on weekends here and there, it is a national pastime but what if you don’t eat any meat?

Most people think people who don’t eat meat will be happy with a salad and some even joke about braaing bread rolls.

Well, this braaibroodjie recipe is fit for people who aren’t big fans of steak, chops or boerewors. This recipe can also be made in the oven if you just feel like some comfort food.

What you need:
• Four roma tomatoes (or normal tomatoes if you’re not so fancy)
• Olive oil
• Salt
• Pepper
• Two tablespoons of basil pesto
• Two red onions
• 100 grams of mature cheddar (don’t skimp on this one, it’s very flavourful. You can even add more cheeses if you feel like it)
• Butter

How you do it:

Fire up the coals and pre-heat the oven to 200°C. Slice the tomatoes into 1/2 centimetre slices and place onto a non-stick baking tray. Drizzle them with olive oil and season them with salt and pepper.

Place them in the oven and let them roast for 20 to 30 minutes, remove them and allow them to cool.

Braaibroodjies:

Spread pesto on the slices of bread and top with grated or chopped red onion, your mature cheddar and roasted tomatoes. Season the bread to taste and put them into a braai grill after buttering the outside so they don’t burn.

Pop the broodjies over medium coals or if you’ve realised you don’t know how to braai properly place them over your hell-fire coals and turn them often.

Once they start turning brown and the cheese starts to ooze out, remove them from the heat, let them cool slightly, slice and serve.
