Bramble G&T

End of the month? Feeling a bit skint? Say cheers to this cent-saver! In an almost empty jar of blackcurrant jam (with about 1 Tblsp left), put 50ml gin, a squeeze of lemon juice and 6 ice cubes. Shake the jar vigorously then pour into a glass. Top up with tonic water and garnish with a mint sprig.

Swedish mint julep

2 small bunches fresh mint, leaves picked, with 4 – 6 leafy sprigs reserved;

4 – 6 tsps caster sugar;

300 – 450ml quality aquavit.

Divide the mint leaves and sugar equally between 4 – 6 tall glasses. Lightly crush the mint with a muddler or wooden spoon. Top with lots of crushed ice and pour over the aquavit. Stir well then top with more ice and garnish with the reserved mint sprigs.
