Pop-up restaurant a hit at The Swiss Hotel School

FERNDALE – Culinary and hospitality students launch pop-up restaurant and it's a huge success.

The food is sublime and the service is excellent at a pop-up restaurant that third-year culinary and hospitality students launched at The Swiss Hotel School.

The restaurant is an annual tradition and runs until October 31 at Turaco House, 33-35 Bond Street in Ferndale.

It’s a bistro theme this year and guests have been enjoying a variety of dishes including arancini con scampi, trout flambé, mushroom and spinach gnocchi, biltong halloumi salad and New York cheesecake, among many others.

The drinks have also been a hit with a vast selection of wines, cocktails and creative milkshakes.

“The menu is interesting and there is something for everyone,” head chef Daniela Brandao told Randburg Sun.

“We always get fresh ingredients and serve fresh food that we know people will enjoy.”

General manager of the restaurant Brandan Durkan said local businesses and residents have been very supportive.

“This is an annual event and we always get repeat customers,” the student said.

Principal at the hotel school, Kuno Tschumi congratulated the future hoteliers and chefs on a successful project.

“Every year it is a challenge for students to start at the basics, work out the details and do their own planning, financial control, marketing and staff arrangements,” he said.

“This year it was especially hard because of Covid-19. They could only finish planning in July instead of May when they usually do. “Let’s cross fingers the restaurant will be successful for the rest of the period.”
