Today, we’ll be sharing a recipe for a vibrant avocado and stir fry salad that’s perfect for Meat-free Monday.

Ingredients

  • McCain Asian Stir Fry
  • 1 Avocado sliced
  • 1 Green pepper chopped
  • Butter and baby lettuce
  • Cucumber sliced
  • Spring onions chopped
  • Baby spinach
  • Fresh coriander
  • Store-bought lime and coriander dressing

Method

  1. Heat a large skillet over medium heat and fry the Stir fry veg until cooked.
  2. In a large salad bowl, add in the salad ingredients, except the avo, and top with the stir fry veg.
  3. Arrange sliced avo.
  4. Top with fresh coriander and drizzle the dressing.
