Ingredients

  • 1.5 cups dark chocolate
  • 2 egg yolks
  • ¼ Cup coconut sugar
  • 1/8 TSP sea salt
  • 1 TSP vanilla extract
  • 1 Cup heavy cream
  • 1 TBSP Woodford Reserve Bourbon

Method

  1. Whisk the heavy cream, egg yolks, sugar and sea salt in a saucepan over medium heat.
  2. Stir constantly until the mixture is thick enough to coat the back of the spatula, about five to 10 minutes.
  3. Pour the mixture in a heat-proof bowl over your chocolate and let it sit for about two minutes.
  4. Add the Bourbon and vanilla and then whisk until smooth.
  5. Divide the mixture among your chosen cups and refrigerate until set, about two hours but overnight if you want it to be more on the thick side.
  6. Top with whipped cream and pair with a glass of Woodford Reserve Bourbon.
