What’s for dinner? Russians with creamy comfort potatoes

This velvety smooth and creamy pot of potatoes and Russians is delicious comfort served on a plate.

Serves 4

You’ll need: Eskort Smoked Russians; 1kg small potatoes; 500ml cream; 250ml milk; 2 onions, chopped; 250ml spring onions, chopped; 1 clove garlic, chopped; 5ml white pepper; salt to taste; 250ml white cheese, grated; 45m flour; olive oil for cooking.

How to: 

Preheat oven to 200°C. 

Slice the potatoes into halves and place them on a baking tray. Drizzle with olive oil and season with salt and pepper. 

Bake for 15 minutes. In a large saucepan over moderate heat, fry onions, garlic and spring onion until glossy.

Thinly slice the Russians and add to the saucepan. Mix through and fry for five minutes. Add flour and stir. 

Add cream and milk. Stir until sauce is smooth then lower heat. 

Add the crispy potatoes to the sauce then transfer to a baking dish. 

Sprinkle cheese on top and bake for five minutes.

Serve with some chilli oil and some more chopped spring onion.
