The day is too long, stress levels are extreme, and all you want to do is go home, climb into your pajamas, and stuff your face with ice cream.

We have you covered with three of the best comfort food ideas for when you are dealing with those dreaded Monday Blues.

Fried ice cream:

Ingredients:

  • 1 quarter tub vanilla ice cream
  • 3 cups crushed cornflakes cereal
  • 1 teaspoon ground cinnamon
  • 3 egg whites

Method:

  • Scoop the ice cream into 8 – 1/2 cup sized balls.
  • Place the balls on a baking sheet and freeze for about about 1 hour.
  • Combine cornflakes and cinnamon in a shallow dish.
  • Beat egg whites until foamy in another dish.
  • Roll ice cream balls in egg whites, then in cornflakes, until the ice cream is completely covered.
  • Freeze the ice cream for another three hours.
  • Heat some oil to 190 degrees C in a deep fryer or large saucepan.
  • Using a basket or slotted spoon, fry ice cream balls for 10 to 15 seconds, or until golden.
  • Drain the balls on paper towels and serve immediately.

Peanut butter and Oreo stuffed Brownies:

Ingredients:

  • 3 cups white sugar
  • 3/4 cup butter
  • 2/3 cup evaporated milk
  • 2 cups white chocolate chips 1
  • One jar marshmallow creme (melted marshmallows)
  • 1 teaspoon vanilla extract
  • 1/2 cup crumbled chocolate Oreo cookies
  • 1 cup crushed chocolate Oreo cookies

Method:

  • Line a 13×9-inch baking pan with parchment paper.
  • Bring sugar, butter, and evaporated milk to a boil, stirring constantly.
  • cook and stir until mixture is smooth.
  • Remove the pot from the heat.
  • Stir the white chocolate chips and marshmallow creme into the sugar mixture until completely melted.
  • Add vanilla extract.
  • Gently fold 1/2 cup crumbled cookies into the white chocolate mixture until just incorporated and spread into the prepared pan.
  • Sprinkle 1 cup crushed cookies evenly over the top.
  • Press cookies lightly into the fudge.
  • Cool at room temperature until set.
  • Cut into small squares to serve.

Chocolate banana cream pie:

Ingredients:

  • 1 recipe pastry for a 9 inch single crust pie
  • 1/4 cup chopped pecans
  • 1 pack cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1 cup heavy whipping cream
  • 1/2 cup white sugar
  • 2 large bananas, sliced
  • 1 pack instant chocolate pudding mix

Method:

  • Preheat oven to 175 degrees C
  • Knead the pie dough and the finely chopped pecans together.
  • Line a 9-inch pan with the pecan dough and fill it with heavy-duty foil.
  • Bake for 20 minutes until set and lightly browned.
  • Beat cream cheese and confectioners’ sugar until smooth, and spread in the pie shell.
  • Prepare chocolate pudding according to package instructions, but use 1/2 cup less milk.
  • Whip the cream together with 1/2 cup sugar.
  • Spread half of the whipped cream over the cream cheese in the shell.
  • Place the sliced bananas on top of the whipped cream, and cover with the chocolate pie filling.
  • Spread the other half of the whipped cream over the bananas.
  • Sprinkle with chopped pecans, and refrigerate at least three hours or overnight before serving
