Three decadent spring-inspired cocktail recipes

Spring is finally here and that means hosting family functions while enjoying the warm outdoors. Here are three spring-themed cocktail recipes guaranteed to have your guests coming back for more!

  1. White rabbit cocktail:

Ingredients:

  • 80ml gin (any brand)
  • 50ml amaretto
  • 50ml fresh double cream
  • 1 tsp lemon curd
  • ¼ tsp vanilla paste
  • 1 handful ice
  • Edible flowers to garnish

Method:

  • In a cocktail shaker, combine the gin, amaretto, double cream, lemon curd and vanilla paste with a handful of ice, and shake until the outside of the shaker feels very cold. Before serving, strain into two small cocktail or glasses and garnish with edible flowers.

 2. Pink lady cocktail:

Ingredients:

  • 100ml dry gin
  • 4 tsp grenadine
  • 1 handful ice
  • 1 large egg white
  • 2 strips pared lemon zest and 2 maraschino cherries (optional for garnish)

Method:

  • Chill two coupe or cocktail glasses in the refrigerator. Fill a cocktail shaker halfway with ice and add the gin and grenadine. Shake until the outside of the shaker is cold to the touch. Remove the ice and strain the mixture into a jug. Pour the gin mixture into the shaker and add the egg white. Shake vigorously until the egg white is frothy; if desired, use a food processor or hand blender. Pour the cocktail into the prepared glasses. Skewer the cherries onto cocktail sticks and use to garnish the glasses with the lemon zest, if desired.

3. Chocolate martini:

Ingredients:

  • 1 tsp melted chocolate
  • 50ml Irish cream liqueur
  • 50ml coffee liqueur
  • 1 tbsp chocolate syrup
  • 100ml vodka
  • 1 handful ice

Method:

  • Brush the sides of two glasses with melted chocolate using a pastry brush. Chill until completely set. Pour the Irish cream, coffee liqueur, chocolate syrup and vodka into a shaker with ice and shake vigorously until the outside of the shaker is cold. Pour into the glasses.
