This traditional soji recipe will soon become a family favourite.

Sent in by expat, Pamela Naidoo, this recipe is from her late mother, Tilda Naidoo.

Cooking Time – 20 minutes, Preparation Time – 10 minutes, Serves – Six people.

Ingredients:

  • 150g butter
  • ½ cup sugar
  • 2 cinnamon sticks
  • ½ tsp elachi (cardamom) powder
  • 1 cup of semolina
  • 1 cup boiling water
  • 1 cup milk
  • 1 tsp egg yellow food colouring
  • Fresh cream
  • Coloured almonds

Method:

  • Brown the semolina in a pot, then add the elachie (cardamon) powder
  • In a separate pot, combine the water, milk, sugar, butter, cinnamon sticks, and yellow egg
  • Bring to boil
  • Slowly add the boiling mixture to the semolina and thoroughly combine
  • Garnish with colored almonds and fresh cream.
