What is Christmas without pudding? Whether you like it or not, fruit cake (known to some as Christmas pudding) has become a tradition over the years.

Here is an easy fruit cake recipe to try this year:

Ingredients:

1,25kg cake mix

8 eggs

500g butter

500g treacle sugar

500g bread crumbs

1 cup wheat flour

1 teaspoon bicarbonate of soda

½ cup ground almonds

1 teaspoon mixed spice

Grated rind and juice of one lemon

¾ cup of good brandy

Method:

Beat the butter and sugar until creamed. Add the eggs and beat well, then add the rest of the ingredients.

Grease a large bowl and line with parchment paper. Fill the bowl with the cake mixture and cover securely with foil.

Place the covered cake mixture inside a large pot. Fill the pot with hot water until halfway up the side of the bowl.

Cook for eight hours on low to medium heat, adding water every half an hour. When the cake is set, allow it to cool and then turn out gently.
