Try Popsicle Cocktails, the next-level party starter

Make your own mojito and add the popsicles to your glass, or serve without alcohol for the children.

The Earthy Cook, Bathandwa Nkambule shared one of personal favourite recipes with the Newcastle Advertiser to share over the festive season.

Make your own mojito and add the popsicles to your glass, or serve without alcohol for the children.

Recipe for the popsicles 
. 2 litres of sprite (cucumber or regular)
. 1 handful of gooseberries
. 1 packet of mint
. 1 handful of blueberries
. 1 handful of cherries
. 1 handful of pomegranate for garnish (use a variety of berries as an alternative)
. 4 ice cream sticks
. Popsicle container

Method:
1. In a jug pour half (1 litre) of Sprite.
2. Use half of your assorted berries and cherries and set aside for the rest for the mojito.
3. Slice your berries in half and poke holes in your cherries with a fork, to release the flavour.
4. Pour your fruits into the jug.
5. Mix the ingredients with a fork and lightly press and mash the sliced berries, to release the flavor while mixing.
6. Cut sprigs off the mint and lightly scrape the leaves on the mint stems before adding into the jug, to enhance the flavour.
7. Add into jug and mix all the ingredients until well combined.
8. Enjoy!
