This week she shares a quick and easy recipe for a delicious yellow potato curry.

Cooking Time – 20 minutes, Preparation Time – 10 minutes, Serves 4-6 people.

Ingredients:
  • Oil
  • 1 onion sliced
  • ½ teaspoon mustard seeds
  • ½ teaspoon jeera seeds
  • Cinnamon sticks
  • Curry leaves
  • Dry Chillies
  • 1 teaspoon ginger and garlic paste
  • 1 grated tomato
  • 4-6 medium potatoes diced into cubes
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Coriander to garnish
Method:
  • Fry onions.
  • Add mustard seeds, jeera seeds, cinnamon, curry leaves, dry chillies and ginger and garlic paste.
  • Add the grated tomato.
  • Add Turmeric powder and mix.
  • Add potatoes, add water and cook until potatoes are soft
  • Add salt to taste
  • Garnish with coriander
  • Serve with rice or bread
