It is well known that Valentine’s Day is the perfect excuse to spoil your loved one. Men and women go out of their way to best depict their undying love for their significant other.

So guys, here are a few easy but tasty recipes for you to prepare for your special lady on Valentine’s Day!

Cream Basil Chicken

Ingredients:

 

  • Hot cooked and drained fettuccine
  • 450g boneless skinless chicken breast, cubed
  • 1 cup minced onion
  • 350g fresh mushrooms, sliced
  • 2 tablespoons oil
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups chicken stock
  • 1 tablespoon chicken cube
  • 1 cup whipping cream
  • 2 tablespoons minced fresh basil
  • 1/4 teaspoon pepper

 

Method:

  1. Saute chicken, onions, and mushrooms in oil for 4 minutes.
  2. In large saucepan, melt butter; stir in flour until smooth.
  3. Add chicken stock, cube and cream.
  4. Stir in basil and pepper.
  5. Bring to a boil; cook and stir for 2 minutes.
  6. Combine with the chicken mixture.
  7. Serve over fettuccini.

This meal is best served with a glass of red wine.

And last but not least, dessert…

Chocolate melting cakes

Ingredients

 

  • 280g semisweet or bittersweet chocolate, chopped
  • 4 tablespoons unsalted butter
  • 5 eggs
  • 1/2 cup sugar
  • 3/4 cup all-purpose flour
  • 5 teaspoons baking powder
  • 1/8 teaspoon salt
  • caramel sauce
  • coffee ice cream

 

Method:

 

  1. Heat oven to 160° C. Lightly coat a 12-cup muffin tin with vegetable cooking spray.
  2. Melt the chocolate and butter in a large bowl over a saucepan of simmering water. Remove from heat.
  3. In another large bowl, beat the eggs and sugar at medium-high speed until light and fluffy. Add the flour, baking powder, salt, and melted chocolate. Mix with a spoon until well blended.
  4. Divide the batter evenly into 8 muffin tins and bake until the cakes have just cooked through, about 15 minutes.
  5. The cakes will still look a bit moist on top. Remove from the oven and let cool 5 minutes. Serve warm with the caramel sauce and ice cream.
