#TipsTuesday: Two quick and easy winter warmer recipes perfect for the working mom

Why not cheat the system a little with these two quick and easy delicious winter warm recipes.

Winter is here!

Days are shorter and nights are longer, which makes the working mom less prone to wanting to spend hours in front of the stove.

We would much rather appreciate a comfortable snuggle on the couch with a warm cup of hot chocolate and a movie.

However, moms still need to ensure hungry bellies are filled with a delicious home-cooked meal.

So why not cheat the system a little with these two quick and easy delicious winter warmer recipes?

  1. Creamy tomato pasta:

Ingredients:

2 tablespoons olive oil
1 tablespoon butter
1 chopped onion (chopped)
1 jar tomato pasta sauce
3 tablespoons of water
1 can of chopped tomatoes
1 packet of spaghetti pasta
1 tub of cream cheese

Method:
Boil a pot of salted water then add the spagethi
Heat the olive oil and butter in a large pan over a medium heat.
Add the onion and cook.
Add the pasta sauce, water and tomatoes to the onion mix.
Bring to a simmer stirring frequently so the mixture doesn’t burn on the bottom.
Add the cream cheese to the pasta sauce a few minutes before the spaghetti is done and leave to cook until the cheese melts and the sauce is creamy.
Drain the pasta and immediately add it to the sauce.

2. Shepherds Pie aka Cottage pie:

Ingredients:
Lean ground beef
1 chopped onion
2 cups of frozen mixed vegetables
1 can cream of mushroom soup with
Garlic for taste
1 teaspoon dried marjoram leaves
Salt and pepper to taste
3 cups of mashed potatoes

Method:
Preheat the oven to 180 degrees Celsius.
Fry the onion and beef until cooked.
Stir in the frozen vegetables and soup and cook until hot, then add marjoram and salt and pepper to taste.
Pour this beef mixture into a well greased over dish and spoon the mash over the meat mixture.
Bake for 35 minutes or until potatoes are golden brown.
You may add cheese to the top of the potato layer if you wish to.
