Cauliflower side-dish turned into main meal

MONTGOMERY PARK – Resident self-publishes cookbook to make people aware of the many varieties of cauliflower cooking.

Resident of Montgomery Park, Mark Sandham completed a three-and-a-half-year project and self-published his first cookbook, Cauliflower Cookery.

Sandham is the manager at the Wits Education Campus Library. “Writing the book took so long, because I can only cook over weekends and test the recipes,” said Sandham. He added that personally, he is not a big fan of cauliflower, but went to an Indian restaurant with his friend a while ago and tasted a potato and cauliflower dish, which he enjoyed. This is partially the reason for writing a cookbook dedicated solely to cauliflower.

Sandham said that the problem is that people buy vegetables and then they do not have a recipe to prepare it and if they search for one online, it almost always has difficult-to-source and expensive ingredients. “Many people don’t know how to cook cauliflower,” said Sandham.

The cookbook was completed in January when Sandham went to collect them at the printers. “It was never my intention to make money as I only printed 75 copies, that I gave as gifts to friends and family, but I can sell them if people are interested.” He explained that people often spend the most time cooking meat and then neglect the vegetables, with this cookbook you can prepare easy, but delicious cauliflower dishes.

Sandham said that he is a lover of cooking. “I inherited my father’s collection of cookbooks and paged through them when I wrote this cookbook. There is an abundance of cauliflower recipes available.”

Giving a laugh, Sandham said that the husbands of two women he gave the book to, emailed him and thanked him for the book. “There is so many male cooks these days,” concluded Sandham.
