Try this braai marinade on your heritage weekend
A recipe perfect for the week-end’s forecasted wet weather.
FORMER ultimate Braai Master Contestant and VIP Host at Suncoast Casino, Hotels & Entertainment, Tsepo Mchunu has put together a flavourful wet and dry rub marinade for T-bone steak and chicken breasts.
“This recipe is perfect for this weekend’s forecasted wet weather. If you are a chicken breast man, such as myself you will definitely love this chicken breast dry rub. This chicken can be put into a Caesar salad or enjoyed with a side of salads and potato wedges,” Mchunu said.
For the Steak – T-Bone (Wet rub recipe)
- 1 cup tomato Sauce
- 50ml Worcestershire Sauce
- 50ml Mrs Ball Chutney
- 1Tsp Aromat
- 2 Lemons
- Half a glass of stony ginger beer
- Dried rosemary leaves
- 1 pinch of salt
- 1 pinch of pepper
Prep Time: 3 Minutes
Cook Time: 12 Minutes
Method:
- Mix together all the liquids this include (Tomato sauce, Worcestershire sauce, chutney, ginger beer) and stir till thickens
- Add dry rosemary, lemon zest, Aromat, salt and pepper
- Stir well till thickens and all ingredients are combined.
- Soak your steak in marinade for 3 hours before you cook (keep refrigerated)
OR
(Dry Rub)
For the Chicken Breasts
- 2 lemons
- 1 x red pepper and fresh chillies
- I batch coriander leaves
- 2 tablespoons dried rosemary leaves
- 2 tablespoons dried basil
- 2 tablespoons dried thyme
- 1 tablespoon garlic powder
- 1/2 teaspoon freshly ground black pepper
- 2 tsp parsley
- 1/2 cup vegetable oil
Prep Time: 5 Minutes
Cook Time: 20 Minutes
Method
- Add finely chopped red pepper, fresh chillies into bowl, add coriander, dried rosemary, basil, 4 table spoons of lemon juice and mix together
- Add ¼ veg oil, garlic powder, coriander and parsley and mix well
- Make use of a blender to finely mix the flavours together
- Soak the chicken breasts 1 hour before you cook (keep refrigerated)
