‘What’s cooking with NGN’ is a way for our residents and readers to share their recipes with the Northglen News.

Local residents will tell us about their favourite recipes, from the easy to the inspiring, all in an effort to help you make every day delicious. You’ll never run out of great recipe ideas again. This month’s culinary extraordinaire is Durban North resident, Tammy van Biljon.

NAME OF DISH: Cream chicken and mushroom pasta

Why is this recipe special to you?

“It’s one of my favourite dishes and is my fail safe. It never lets me down and over the past 10 years I’ve perfected the recipe. My family is Mauritian and they love their food and my passion for cooking began with my gran. This dish is relatively quick and ideal for anyone looking to entertain guests without going too big.”

Most underrated ingredient: “I would have to say balsemic vinegar.”
Favourite cuisine: “I absolutely adore Mauritian food, as well as curries and Asian food.”
Favourite ingredients: “Dhania, ginger and steak.”
Something your palette doesn’t like: “Anything that swims.”
First meal you cooked: “Yeah, it was horrible. I made a stirfry and it wasn’t very good. My poor family, including my brothers never said a thing, they also never asked me to make it again.”

Ingredients:
4 Chicken Fillets
1 Onion
10ml lemon juice
2 Garlic Cloves
1 Red Pepper- sliced
1 Punnet Mushrooms
1 tin chopped tomato
1 250ml cream
Chicken Spice, Basil, Italian Mix, Parsley, Salt, Pepper
1 tsp sugar
Pasta (any shape)

How to:

1. In a large frying pan, heat olive oil. Dice onion and mince garlic and then fry until soft. Slice chicken into strips and add to the frying pan. Add lemon juice and chicken spice and stir until cooked.
2. Add mushrooms and herbs to taste, once the mushrooms are mostly cooked add in the sliced pepper. Once those are cooked till firm add the chopped tomatoes and additional herbs if required.
3. Simmer for 15 minutes and then add the sugar. Add the cream and allow to simmer for 15min.
4. Serve over pasta and enjoy.
