Ingredients
- 3 cups Harvestime All-in-One Mix
- 1 cup Harvestime Green Beans
- 2 tablespoons Oil
- 1 large onion sliced
- 2 teaspoons garlic and ginger mix
- ½ teaspoon turmeric powder
- 3 tablespoons curry powder
- 2 – 3 medium-sized tomatoes diced
- Water
- Salt and pepper to taste
- Chopped coriander for garnish – optional
Method
- Heat oil in a pot on medium to high heat.
- Add the onions.
- Allow the onions to cook until the colour begins to change about 8-10 minutes.
- Sprinkle in some salt and the garlic and ginger mix – stir and sauté for a minute.
- Add the spices and mix well, followed by the tomatoes – cook for 10 minutes before adding in the frozen veg – mix well.
- Bring to a boil and lower the heat.
- Cover and cook for 10 – 15 minutes – keep stirring and check that the water doesn’t dry up completely.
- Season according to taste and remove from the heat.
- Garnish and serve with fluffy white rice or roti.
