All-in-one masala with curry, ginger and tumeric

Prep time: 5 Minutes | Cooking time: 40 – 45 minutes | Serves: 4 – 5

Ingredients

  • 3 cups Harvestime All-in-One Mix
  • 1 cup Harvestime Green Beans
  • 2 tablespoons Oil
  • 1 large onion sliced
  • 2 teaspoons garlic and ginger mix
  • ½ teaspoon turmeric powder
  • 3 tablespoons curry powder
  • 2 – 3 medium-sized tomatoes diced
  • Water
  • Salt and pepper to taste
  • Chopped coriander for garnish – optional

Method

  1. Heat oil in a pot on medium to high heat.
  2. Add the onions.
  3. Allow the onions to cook until the colour begins to change about 8-10 minutes.
  4. Sprinkle in some salt and the garlic and ginger mix – stir and sauté for a minute.
  5. Add the spices and mix well, followed by the tomatoes – cook for 10 minutes before adding in the frozen veg – mix well.
  6. Bring to a boil and lower the heat.
  7. Cover and cook for 10 – 15 minutes – keep stirring and check that the water doesn’t dry up completely.
  8. Season according to taste and remove from the heat.
  9. Garnish and serve with fluffy white rice or roti.
