Kiwis and red cherries unite in the Spring Fling cocktail

Whether you’re hosting a garden gathering or simply sipping on your patio, this fresh cocktail will be the star of the show.

As with many great things in life, this cocktail came about by chance – a close friend’s 60th birthday party. On a warm spring evening, we needed a special drink to toast the birthday girl. With just a few basics on hand – vodka, simple sugar, and kiwis and cherries in the fruit bowl – the Spring Fling was created.

Method

  1. In a cocktail shaker, combine the sliced kiwis and cherries. Using a muddler or the back of a spoon, gently press the fruit to release its juices.
  2. Pour in the vodka, fresh lime juice, and simple syrup over the muddled fruits. Add a few ice cubes to the shaker.
  3. Firmly secure the shaker and give it a vigorous shake for about 15-20 seconds.
  4. Double strain the cocktail into a chilled highball or tumbler glass over fresh ice, using a fine mesh strainer to catch any small fruit bits. The cocktail should have a clear, slightly red hue.
  5. Top off your cocktail with a splash of soda water.
  6. To finish, garnish with a kiwi slice and a couple of whole cherries.
