Healthy and delicious apple and berry oat muffins

Made with Laager Milk infused with apple and berry, these muffins are packed with oats, fresh apples, and the natural sweetness of honey and apple purée. Recipe compliments of Joekels Tea.

Ingredients

Wet Ingredients:

  • 1 cup *Laager Milk (Apple & Berry)
  • ½ cup apple purée
  • ½ cup smooth peanut butter
  • 2 larger eggs
  • ¼ cup pure honey
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon mixed spice
  • ¼ teaspoon salt
  • 1 cup finely diced apples

Method

  1. Preheat oven to 180 degrees Celsius. Line a 12-cup muffin pan with muffin liners and spray with nonstick cooking spray.
  2. In a bowl, mix together the apple purée, peanut butter, eggs, honey, vanilla, and Laager milk until smooth and well combined.
  3. Stir in dry ingredients: oats, baking powder, cinnamon, mixed spice and salt; stir well to combine.
  4. Fold in the diced apples.
  5. Evenly distribute the batter between muffin liners and bake for 25-30 minutes or until golden brown on top. Once ready to serve, feel free to eat warm or cold. I love topping mine with nut butter or melted chocolate once cooled.

*To make Laager milk: steep 2 Laager Rooibos (apple & berry) teabags in hot milk for 3min and remove the teabags.
