Step 1: Prepare the hot fudge sauce
  1. In a small saucepan, heat the double cream over medium heat until it begins to simmer. Do not let it boil.
  2. Place the finely chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for a few minutes to melt.
  3. Add the caster sugar, unsalted butter, vanilla extract, and a pinch of salt to the bowl. Stir until the mixture is smooth and glossy.
  4. Allow the sauce to cool slightly. It should be warm and pourable when you’re ready to assemble the sundaes.
Step 2: Make the marshmallow topping
  1. In a medium saucepan, melt the unsalted butter over low heat.
  2. Add the mini marshmallows and golden syrup to the melted butter. Stir constantly until the marshmallows are fully melted and the mixture is smooth.
