With layers of rich, creamy ice cream, gooey hot fudge, and delightful toppings, a sundae is the epitome of dessert decadence. This hot marshmallow fudge sundae is perfect for any occasion and easier to make than you think!
Ingredients
For the hot fudge sauce:
- 200g Dark chocolate (70% cocoa, finely chopped)
- 100ml Double cream
- 100g Caster sugar
- 50g Unsalted butter
- 1 tsp Vanilla extract
- 1 pinch of salt
For the marshmallow topping:
- 150g Mini marshmallows
- 50g Unsalted butter
- 2 tbsp Golden syrup
For the sundae assembly:
- 1 litre Vanilla ice-cream
- 8 Oreo biscuits (crushed)
- 50g Almonds (toasted and chopped)
- Whipped cream
Preparation
Step 1: Prepare the hot fudge sauce
- In a small saucepan, heat the double cream over medium heat until it begins to simmer. Do not let it boil.
- Place the finely chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for a few minutes to melt.
- Add the caster sugar, unsalted butter, vanilla extract, and a pinch of salt to the bowl. Stir until the mixture is smooth and glossy.
- Allow the sauce to cool slightly. It should be warm and pourable when you’re ready to assemble the sundaes.
Step 2: Make the marshmallow topping
- In a medium saucepan, melt the unsalted butter over low heat.
- Add the mini marshmallows and golden syrup to the melted butter. Stir constantly until the marshmallows are fully melted and the mixture is smooth.
- Keep the marshmallow topping warm over very low heat until ready to use. Stir occasionally to prevent it from setting.
Step 3: Prepare the toppings
- Place the Oreo biscuits in a resealable bag and crush them into fine crumbs using a rolling pin. Set aside.
- In a dry frying pan over medium heat, toast the almonds until they are golden brown and fragrant. This should take about 5 minutes. Chop them coarsely and set aside.
Step 4: Assemble the sundaes
- Place two or three generous scoops of vanilla ice cream into each sundae glass or bowl.
- Drizzle a generous amount of hot fudge sauce over the ice cream.
- Spoon the warm marshmallow topping over the hot fudge, allowing it to drizzle down the sides of the ice cream.
- Sprinkle the crushed Oreo biscuits over the marshmallow topping.
- Finish with a sprinkle of toasted, chopped almonds for a delightful crunch.
