Rich and gooey hot marshmallow fudge sundaes

This mouthwatering treat pairs creamy ice-cream with gooey homemade hot fudge and a selection of delightful toppings.

With layers of rich, creamy ice cream, gooey hot fudge, and delightful toppings, a sundae is the epitome of dessert decadence. This hot marshmallow fudge sundae is perfect for any occasion and easier to make than you think!

Ingredients

For the hot fudge sauce:
  • 200g Dark chocolate (70% cocoa, finely chopped)
  • 100ml Double cream
  • 100g Caster sugar
  • 50g Unsalted butter
  • 1 tsp Vanilla extract
  • 1 pinch of salt
For the marshmallow topping:
  • 150g Mini marshmallows
  • 50g Unsalted butter
  • 2 tbsp Golden syrup
For the sundae assembly:
  • 1 litre Vanilla ice-cream
  • 8 Oreo biscuits (crushed)
  • 50g Almonds (toasted and chopped)
  • Whipped cream

Preparation

Step 1: Prepare the hot fudge sauce
  1. In a small saucepan, heat the double cream over medium heat until it begins to simmer. Do not let it boil.
  2. Place the finely chopped dark chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for a few minutes to melt.
  3. Add the caster sugar, unsalted butter, vanilla extract, and a pinch of salt to the bowl. Stir until the mixture is smooth and glossy.
  4. Allow the sauce to cool slightly. It should be warm and pourable when you’re ready to assemble the sundaes.
Step 2: Make the marshmallow topping
  1. In a medium saucepan, melt the unsalted butter over low heat.
  2. Add the mini marshmallows and golden syrup to the melted butter. Stir constantly until the marshmallows are fully melted and the mixture is smooth.
  3. Keep the marshmallow topping warm over very low heat until ready to use. Stir occasionally to prevent it from setting.
Step 3: Prepare the toppings
  1. Place the Oreo biscuits in a resealable bag and crush them into fine crumbs using a rolling pin. Set aside.
  2. In a dry frying pan over medium heat, toast the almonds until they are golden brown and fragrant. This should take about 5 minutes. Chop them coarsely and set aside.
Step 4: Assemble the sundaes
  1. Place two or three generous scoops of vanilla ice cream into each sundae glass or bowl.
  2. Drizzle a generous amount of hot fudge sauce over the ice cream.
  3. Spoon the warm marshmallow topping over the hot fudge, allowing it to drizzle down the sides of the ice cream.
  4. Sprinkle the crushed Oreo biscuits over the marshmallow topping.
  5. Finish with a sprinkle of toasted, chopped almonds for a delightful crunch.
  6.  If desired, top with a dollop of whipped cream for extra indulgence.

  • Mint Chocolate Sundae: Use mint chocolate chip ice cream and add a few drops of peppermint extract to the hot fudge sauce for a refreshing twist.
