Ingredients
The base
- 100g sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 6 Tbsp milk
- 6 Tbsp oil
- 1 medium egg
- 400g flour
- 1 tsp baking powder
- 3 Tbsp melted butter
For the plums
- 1 kg plums without the stones, cut into quarters
- 3 Tbsp cornflour
- 2 Tbsp honey
- ¾ tsp mixed spice
For the streusel
- 180g butter
- 200g sugar
- 300g flour
- 1 tsp baking powder
Method
The base
- Preheat the oven to 180 degrees C.
- Place all ingredients for the base into the bowl of your food processor and using the dough hook mix to a dough.
- Roll the dough out and line a 23 cm baking tin with the dough.
- Brush the melted butter over.
For the plums
- Toss the ingredients for the plums together.
- Arrange on top of the prepared base.
For the streusel
- Place all the ingredients into the bowl of a food processor and pulse till crumbly.
- Spoon over the plums in the prepared base.
- Bake for 45-50 minutes or until golden and cooked through.
