Ingredients
- 300g farfalle / bowtie pasta
- 200g cherry tomatoes, quartered
- 1 pack diced bacon
- Handful Italian parsley
- Bunch / large handful of butter lettuce
- 1 – 2 tbsp Eskort creamy mayo
- Juice of 1 lemon
- Salt & pepper
Method
- Cook the pasta according to pack instructions and allow time to cool.
- Pan fry the bacon
- Fine chop the parsley
- Quarter the tomatoes and shred or tear the lettuce
- Mix the mayo with the juice of the lemon.
- Toss everything together
