Ingredients

  • 2 TBSP oil
  • 1 can Rhodes Quality Chakalaka
  • 1 cup of brown rice that has been par-cooked
  • 1 whole chicken cut into 8, or 8 pieces of chicken
  • 2 TBSP Hinds Spices Chicken spice
  • 1 tsp Hinds Spices Paprika
  • ½ tsp salt

Method

  1. Marinate your chicken pieces with the oil, chicken spice and paprika. Par-cook your brown rice until it is halfway done. Use an Instant Pot and add 1 cup rinsed rice and 1.5 cups water. Set to Pressure. Cook for 12 minutes, allow 5 minutes for natural release, then release remaining pressure.
  2. Drain and pour into a baking dish, then mix the can of chakalaka into the rice.
  3. Gently pour ½ cup of water over the rice/chakalaka mix. Evenly layer your chicken pieces on top of the rice mixture. Place the dish into your Vortex Versazone air fryer at 165°C for 50 minutes. When the timer has 20 minutes remaining, then give the chicken a turn.
  4. Continue cooking until the timer elapses. Let it rest for 10 minutes. Garnish with chopped parsley and a squeeze of lemon.
  5. Serve with steamed broccoli or a fresh salad.
