Ingredients

  • 1 box of your favourite cake mix
  • 1 can of cream cheese frosting
  • 2 cups white cooking chocolate
  • Orange food colouring
  • Lollipop sticks
  • Black or brown decorating icing
  • Green royal icing
  • Styrofoam block or a tall glass for standing the cake pops

Method

  1. Prepare the cake mix according to the package instructions.
  2. Bake it in a greased cake pan, and let it cool completely.
  3. Once the cake has cooled, crumble it into fine crumbs in a large bowl.
  4. Add about 3/4 of the can of cream cheese frosting to the cake crumbs.
  5. Mix it until the cake and frosting combine into a dough-like consistency. You may need to use your hands for this step.
  6. Take small portions of the cake mixture and roll them into pumpkin-shaped balls. Make sure they are evenly sized.
  7. Insert a lollipop stick into each pumpkin, about halfway through.
  8. Place them on a baking sheet lined with parchment paper and freeze for about 20 minutes to firm up.
  9. In separate microwave-safe bowls, melt the white chocolate according to the package instructions. Add a few drops of orange food colouring and stir well.
  10. Dip each pumpkin cake pop into the melted chocolate, ensuring it’s fully coated. Allow any excess to drip off.
  11. Before the chocolate coating sets, add a small piece of the green Royal icing to the top (for the pumpkin’s stem). Use a toothpick or a small brush to create ridges on the pumpkin to make it look more realistic.
  12. Place the cake pops back on the parchment paper to set completely.
  13. Once the chocolate coating has hardened, use the black or brown decorating icing to draw faces on your pumpkin cake pops. Get creative with spooky or silly expressions.
  14. If you like, you can also use edible candy eyes to add an extra layer of cuteness. To display your Halloween pumpkin cake pops, stick the lollipop sticks into a Styrofoam block or a tall glass.
