Malva Pudding made in the air fryer

Malva pudding, a cherished South African dessert, is a delightful sweet treat that holds a special place in the hearts of many.

This delectable dish is characterised by its unique blend of ingredients, including apricot jam, which imparts both sweetness and a hint of tanginess. What truly sets it apart, however, is its spongy yet caramelised texture that results from a careful baking process.

Ingredients

  • ¾ cup sugar
  • 1 large egg
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • A pinch of salt
  • 1 cup milk
  • 1 tablespoon vinegar
  • 2 tablespoons smooth apricot jam
  • 1 teaspoon vanilla essence
  • 2 tablespoons butter, melted and set aside to cool

For sauce

  • ½ cup milk
  • ½ cup cream
  • ¼ cup sugar
  • 3 tablespoons butter
  • 1 teaspoon vanilla essence

Method

1. Beat the sugar, egg and jam for 5 minutes until pale.
2. Add the butter and beat until incorporated.
3. In a separate bowl, sift the flour, baking powder, bicarb and salt then set aside.
4. Slowly add the dry ingredients to the batter, alternating with the milk, vinegar and vanilla mixing until just incorporated after each addition.
5. Pour the batter into a greased, ovenproof dish and bake in the InstantPot Versazone Airfryer on 180C for 20-30 minutes or until a skewer comes out clean.
6. While it’s baking, prepare the sauce by adding all the ingredients to the saucepan and letting it come to the boil.
7. Once baked, pour over the hot sauce, allowing it to fully soak in.
8. Serve with custard or as desired.
