Serves 4
You’ll need: 4 Eskort Loin Chops; 1 ½ cups mixed herbs chopped; juice from 1 lemon; 1 Tbsp butter; 1kg baby potatoes cut in half and pre-cooked; 2 tsp coarse salt; 3 Tbsp lemon flavoured olive oil.
How to:
Heat a frying pan over high heat.
Season the chops with lemon oil and salt.
Coat the chops in the chopped herbs and fry them in the pan on both sides for 5-7 min.
Add the butter and the lemon juice to the pan and remove the pan from the heat.
Serve:
Serve the chops with the baby potatoes and pour the pan juices over the baby potatoes.
Add and garnish with some more chopped herbs.
