Thirty-minute meals: ginger salmon with garlicky butter beans and spinach

A super easy salmon dish bursting with so much flavour.

This recipe is both delicious and nutritious and a must for an easy weekday meal.

You will need:
* Three tablespoons soy sauce.
* Fresh ginger, thinly sliced and crushed with the back of a knife.
* Four 30g skinless salmon fillets.
* Four tablespoons extra-virgin olive oil.
* Two large garlic cloves, thinly sliced.
* Two cans butter beans.
* Two tablespoons thinly sliced spring onions.
* One bag of baby spinach, about seven to eight cups.

What to do:
Combine the soy sauce and ginger in a shallow bowl and add the salmon; set aside to marinate while you cook the beans and spinach.
Heat two tablespoons of olive oil in a saucepan or deep skillet over medium heat.
Add the garlic and cook until sizzling and softened but not browned. Stir in the beans and simmer for five minutes. Stir in the spring onions and spinach and reduce the heat to low.
Heat a large non-stick skillet over medium to high heat and add the remaining olive oil. Lift the salmon fillets out of the marinade and cook until nicely browned and a little pink in the centre, about four minutes per side.
Serve the salmon hot with the beans and spinach.
