A week’s worth of reasons to love eggs

Eggs are so versatile and nutritious, not to mention delicious! Here are even more reasons to eat eggs everyday.

Monday

We ALL start our diets on a Monday, don’t we! Well, this week let’s kick off as we mean to go on. With a egg. Do you know that eggs can help to reduce calorie intake and so help you lose weight? Studies have shown that having eggs for breakfast – boiled or poached work best for us when we’re trying to lose a few kilos – may lead to decreased feelings of hunger and to having fewer cravings.

Tuesday

Let’s keep the healthy vibe going. Eggs are full of nutrients … protein, heart-healthy mono-unsaturated fats, vitamins such as B12, riboflavin, and folate, and minerals like selenium. They help with heart and eye health, and also help to maintain your immune system.

Wednesday

It’s pay day soon … never soon enough! Hello eggs. They are the most affordable and cost effective source of protein. So much so that the International Egg Commission describes them as ‘the most economical way’ for many people around the world to eat high-quality protein.

Thursday

School lifts and board meetings. No time to shop on the way home. Luckily, we have eggs. And no matter what else there is in the pantry, we can have a delicious dinner on the table. From simple soft boiled eggs and soldiers to creamy scrambled eggs (hot tip: mix a can of creamed sweetcorn to your scrambled eggs as they’re cooking … you can thank us later) to a scrumptious Spanish tortilla omelette. Baked, fried, boiled, scrambled, with fancy toppings or just a knob of butter … yum!

Friday

Date night. Let’s get some egg beauty hacks going. A quick face mask with the whites … beat the egg white until stiff, mix in one teaspoon each honey and lemon juice, apply to your face with a clean make up brush or cotton wool pad, and leave for 15 minutes. Rinse well with warm (not hot) water. Now take the yolk. Mix it with one tablespoon olive oil, then apply to damp hair. Leave for half to three-quarters of an hour, then rince with cool or just lukewarm water (you don’t want to cook that egg!). The result. Smooth skin and shiny hair. Enjoy the date!

Saturday

Gym. Eggs play an important role in building muscle. Eggs before weights!

Sunday

Time to prep for the week. Hard boil some eggs for Monday’s lunch box and bake some egg muffins for easy breakfasts or after school snacks.

For the basic egg muffin recipe, you’ll need 10 large eggs and salt and pepper to taste.

Fillings: Add fillings of your choice. Steamed and chopped left over veggies, grated cheese, shredded chicken, cubes of ham, bacon pieces, cooked mushrooms, spinach and sun dried tomatoes. Preheat oven to 180. Line muffin pan (12 muffins) with non-cook spray. Crack eggs into a bowl and whisk with seasoning, then add your filling. Divided into each muffin tin, don’t over fill. Bake for 12 to 15 minutes until set. These will keep in the fridge for three or four days in an airtight container, and you can easily reheat in the microwave or air-fyer.
