Crafting the perfect White Rabbit

Created by innovative bartenders looking to capture the essence of spring in a glass, this cocktail carves out a unique identity all its own.

While the Brandy Alexander has been a staple of cocktail menus since the early 20th century, the White Rabbit represents a modern, playful reimagining of this timeless classic with the addition of lemon curd and figs.

Ingredients

  • 50ml amaretto liqueur
  • 25ml double cream
  • 15ml lemon curd
  • 1 fresh fig, quartered
  • 1/4 tsp vanilla extract
  • A few cashew nuts
  • Ice cubes

Method

  1. In a cocktail shaker, muddle the quartered fig gently.
  2. Add the amaretto, double cream, lemon curd, and vanilla extract to the shaker.
  3. Fill the shaker with ice cubes.
  4. Shake vigorously for 10-15 seconds to ensure all ingredients are well combined and chilled.
  5. Double-strain the mixture into a chilled coupe or martini glass to remove any fig pulp.
  6. Garnish with a few slices of figs and cashew nuts.
