Chicken gyro wrap made in the air fryer

Craving something yummy but need it fast? The air fryer chicken gyro wrap is the perfect solution. This Mediterranean-inspired dish brings together juicy, seasoned chicken, fresh veggies, and tangy tzatziki sauce, all wrapped up in a warm pita. Recipe compliments of Instant Pot.

 

Ingredients

  • 3-4 chicken breasts (depending on size)
  • Olive oil
  • 500g baby potatoes
  • Lettuce leaves
  • Baby tomatoes for roasting
  • Salad onions
  • Pitted olives
  • 4 flatbreads or pitas

 

Gyro spice mix

  • 1 Tablespoon of dried oregano
  • 1 Tablespoon of paprika
  • ¾ teaspoon cumin
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 ½ teaspoon of salt
  • ¾ teaspoon pepper

Tzatziki sauce

  • 250ml Greek yoghurt
  • Cucumber
  • Chopped fresh mint leaves
  • 1-2 cloves of garlic; crushed or grated
  • Lemon

Method

  1. Chicken: Spray chicken breasts lightly with olive oil. Mix the gyro spice mixture and rub it over the chicken breasts. Air fry at 180°C for 20 minutes.
  2. Potatoes: Cut the potatoes in half and spray or drizzle lightly with olive oil. Season with gyro mixture.  Air fry at 200 °C for 20 minutes.
  3. Tzatziki: Grate 2 cups of cucumber (skin on), sprinkle some salt over it and place it in a bowl. Chop mint leaves, add garlic and +- 1 tablespoon of lemon juice into the yoghurt and mix. Stir in the cucumber and set aside.
  4. Build your gyro:  We like starting with the leaves, followed by the sliced chicken breast, a generous amount of tzatziki, with the roasted tomatoes lightly flattened on top. Lastly add olives and salad onion.
