Wrap up your Monday with a vegetarian burrito

Are you a vegetarian or simply looking to incorporate more plant-based meals into your diet? Look no further than the delectable vegetarian burrito! Packed with a medley of vibrant vegetables, hearty beans, and savoury soya mince, this burrito is the perfect dish for a meat-free Monday.

Ingredients

  • 400g soya mince (meat-free mince)
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chilli powder (adjust to your desired heat level)
  • 400g can of mixed beans, drained and rinsed
  • 200g can of sweetcorn, drained
  • 4 large vegan tortilla wraps
  • 2 cups shredded lettuce
  • 1 avocado, sliced (optional)
  • Salsa or hot sauce (optional)

Method

  1.  In a large skillet or pan, cook the soya mince according to the package instructions until it’s lightly browned and crumbly. Set aside.
  2. In the same skillet, heat a tablespoon of olive oil or vegetable oil over medium heat. Add the diced red bell pepper, chopped onion, and minced garlic. Sauté for about 5 minutes, or until the vegetables are tender and fragrant.
  3. Sprinkle the cumin, smoked paprika, and chilli powder over the sautéed vegetables. Stir well to combine the spices. Add the cooked soya mince, mixed beans, and sweetcorn to the skillet. Mix everything together until well combined and heated through.
  4. Warm the tortilla wraps according to the package instructions or by briefly heating them in a dry skillet or microwave. Place a generous portion of the soya mince and vegetable mixture in the centre of each tortilla wrap. Top with shredded lettuce and sliced avocado (if using).
  5. Carefully fold the bottom of the tortilla over the filling, then fold in the sides and continue rolling tightly to form a burrito. Serve the burritos warm, with your favourite salsa or hot sauce on the side.
