Honey and paprika chicken with pineapple and lime salad

Indulge in a tropical delight with this Hawaiian-themed pineapple and lime salad, perfectly paired with honey and paprika glazed chicken.

Juicy pineapple and zesty lime mingling in a refreshing salad, paired perfectly with tender honey and paprika-glazed chicken cooked on the braai, is the perfect mid-week meal. Recipe compliments of Astral Chicken.

Ingredients

  • ¼ cup (60ml) honey
  • 2 Tbsp (30ml) smoked paprika
  • salt and milled pepper
  • 1 County Fair braai pack
  • ¼ cup (60ml) melted butter

Salad:

  • ½ pineapple, peeled and cubed
  • a handful of baby spinach
  • 3-5 radishes, sliced
  • 3-5 limes, sliced
  • a glug of olive oil
  • fresh chilli flakes

Method

  1. Combine the honey, paprika and chicken. Season.
  2. Braai over hot coals for 25-30 minutes, brushing with butter at regular intervals.
  3. Combine the salad ingredients in a bowl.
  4. Drizzle with oil, season and sprinkle with chilli flakes.
  5. Serve the chicken with your pineapple and lime salad, and garnish with fresh herbs.

Cook’s note: Remember that wings and drumsticks cook faster than thighs and breasts. Keep a close eye on those smaller cuts.
