Meat-free Monday: Creamy corn casserole

Ingredients

  • 300 grams Harvestime Corn
  • ½ cup margarine
  • ¼ cup flour
  • 2 eggs beaten
  • 1 cup milk
  • 1 tin creamed corn
  • Grated cheese
  • Salt and pepper

Method

  1. Preheat oven to 180 Degrees Celsius
  2. In a sauce pan, heat the margarine over medium-low heat until melted
  3. Whisk the flour into butter until well incorporated, followed by the eggs and milk
  4. Add in the creamed corn and frozen corn and season
  5. Transfer the corn mixture into a baking dish, top with grated cheese and bake uncovered for 30 minutes, remove the foil and bake for a further 15 – 20 minutes
  6. Serve warm
