Nutrient-packed avo, beans, and egg on toast

Start your day right with a wholesome breakfast featuring creamy avo, protein-rich beans, and a perfectly cooked egg served on toast.

Avo and eggs are the BFFs of the breakfast world. A delicious way to start your day, packed with nutrients, proteins and good fats, you can’t go wrong with adding an avo to your breakfast.

A breakfast consisting of avocado, eggs, beans, and toast offers numerous health benefits due to the combination of nutrients and food groups it provides.

Eggs and beans are excellent sources of protein while avocado is packed with heart-healthy monounsaturated fats. These fats can help improve cholesterol levels, reduce the risk of heart disease, and support overall cardiovascular health. Recipe compliments of The South African Avocado Growers’ Association.

Ingredients

  • 1 ripe avocado, peeled and pip removed
  • 2 slices sourdough toast
  • 1 can (410 g) baked beans in tomato sauce or chakalaka baked beans
  • 2 fresh eggs, at room temperature

Method

  1. Peel and de-pip the avo, slice or mash.
  2. Boil the eggs for 7 minutes, remove and place into an ice bath to stop the cooking. Peel carefully as they will be soft. (Cook for longer, 8-10 minutes if you prefer firmer egg yolk)
  3. Spoon the beans over the toast, top with avo halves or mashed avo and the soft-boiled egg.
  4. Season and serve.
