Minerality Highball

Leaning into the dried tannic qualities of the whisky, this aperitif highball is bright, dry, earthy, and savoury. Aiming to mimic the saline qualities in Umami flavours, this serve is finished with a garnish with a large leaf of Shiso (Japanese Basil).

Ingredients

  • 30ml Johnnie Walker Blue Label Elusive Umami
  • 15ml Ever leaf Marine Aperitif
  • 10ml Shiitake Manzanilla Sherry
  • 60ml Soda Water
  • Basil (garnish)

Method

  1. Combine ingredients and build over column ice in a 300ml Highball glass.

Finality Cocktail

Johnnie Walker Blue Label Elusive Umami is stirred down with caramel and seasoned with umami-rich Worcestershire sauce to create a complex, mind-bending take on a salted-caramel old-fashioned. Finished with a candied and roasted cherry tomato in place of a traditional maraschino cherry, this cocktail leans heavily into the natural umami-rich dessert flavours in the whisky.

Ingredients

  • 60ml Johnnie Walker Blue Label Umami
  • 7ml Caramel Syrup (Monnin)
  • 1-2ml Worcestershire sauce (2-3 dashes)

Method

  1. Stir all ingredients over ice in a mixing glass.
  2. Strain the mixture into a chilled glass over a large cube of clear ice.

Garnish: Roasted cherry tomato

To prepare the roasted cherry tomato:

  1. Pre-heat the oven to 230 degrees.
  2. Pierce vine cherry tomatoes with toothpicks all over.
  3. Steep in 2:1 sugar syrup for 15 minutes.
  4. Place on a non-stick tray and bake in the oven for 4-5 minutes.
  5. Let cool before serving and keep refrigerated.
