Ingredients

  • 200g Eskort Streaky Bacon
  • 4 Avocados
  • 4 soft-boiled Eggs
  • ½ tsp Chilli Flakes
  • ½ tsp Cayenne Pepper
  • 1 tsp Paprika
  • 1 Lemon
  • Salt and Pepper
  • 1 tsp Bicarb
  • 1 tsp Salt
  • tsp Vinegar

Method

  1. Add the eggs, bicarb, salt, and vinegar to a pot of cold water, over a gas stove, making sure the eggs are completely submerged. Add the pot to high flame and allow the water to boil.
  2. Let the eggs to cook for 7 minutes.
  3. Place the eggs in a bowl of ice water to cool down for roughly 1 minute.
  4. Place the streaky bacon in a cold frying pan over a gas stove and allow to heat over a high flame. Fry the bacon on both sides until crispy.
  5. Mash the avocado, chili flakes, cayenne, paprika and lemons in a bowl and season with salt and pepper.

Serve

Cut the boiled eggs in half and, serve it with the crispy bacon on the spicy avo as a quick, healthy but comforting breakfast.
