What’s for dinner? Sausage penne pasta

Keep things simple with this scrumptious and filling dinner... it is the perfect choice for a weeknight dinner.

Serves 4 

You’ll need: 250g penne pasta or pasta of your choice; 30ml canola oil; 1 red pepper or yellow pepper, chopped; 500g sausage, skins removed and cut into 3cm pieces; 250ml tomato and chilli pasta sauce of your choice; salt and freshly ground black pepper; 250ml Lancewood White Cheddar, grated; 15ml fresh basil, shredded

How to:

Cook the penne according to the instructions on the packet. Drain and keep warm.

Using a frying pan, heat the oil and fry the pepper for 1 minute. Add the sausage and brown all over. Add the pasta sauce and cook for 1 minute.

Add the pasta and gently toss to mix. Heat through and season to taste.

Sprinkle cheese and basil over and enjoy!

Hints and tips:

For a spicy variation, fry 125g thinly sliced chorizo with the peppers.
