What’s for dinner? Spicy Mexican beef skillet

What’s not to love about this spicy beef skillet? It's hearty, perfect for a single bowl meal, and packed with flavour.

Serves 4 

You’ll need: 300g McCain Sweet Corn; 1 packet McCain Savoury Rice; 500g beef mince; oil; 3 teaspoons garlic and ginger, crushed; 1 onion, chopped; 1 large red pepper, diced; 1 can red beans, rinsed and drained; 1 can diced tomatoes; 1 cup chicken stock; 2-3 teaspoons chilli flakes; 1 tablespoon cumin powder; juice of a lemon; chopped dhania; salt and pepper.

How to: 

Cook McCain Savoury Rice according to package instructions and set aside.

In a large pan, heat the oil and onion and add the beef mince. Cook until browned, add the garlic and ginger.

Add the peppers with the spices and tomatoes. Allow cooking for 10 minutes before adding the red beans and sweet corn.

Mix the beef mince mixture with the rice. Squeeze the lemon juice and garnish it with dhania.
