Thirty-minute meals: Mexican mac and cheese

Try a fun spin on traditional mac and cheese for a night full of Mexican flavour.

This meal is made in less than 30 minutes.

You will need:
* Salt.
* A packet of macaroni.
* One tablespoon vegetable oil.
* 500 grams beef mince.
* One jar tomato salsa.
* Tomato paste.
* One cup shredded Cheddar cheese.
* One avocado, diced.
* One cup crushed tortilla chips.

What to do:
Bring a large pot of salted water to a boil over high heat. Cook pasta until just tender, about eight minutes or as package label directs. Drain.
Warm oil in a large pan over medium-high heat. Add meat and half a teaspoon of salt. Cook, breaking up chunks with a wooden spoon, until meat loses its pink colour, about five minutes.
Stir in salsa and tomato paste and bring to a simmer. Stir in pasta and cook until bubbling, about three minutes. Stir in cheese and cook, stirring until cheese has melted, about one minute longer. Spoon into bowls, top with avocado and chips and serve.
