Quick and easy recipes for long road trips

Famous chef Dylan Jonsson creates easy meals for long road trips.

The preparation and planning that goes into a family holiday road trip is often highly stressful and taxing. The last thing you want to worry about is what to eat.

So instead of stuffing the car with bags of chips and sweets, why not try these easy, healthy recipes exclusively created for Rekord by Dylan Jonsson, winner of the Chopped SA cooking competition on the Food Network, and owner of A Thyme to Dine, a company that creates luxury chocolate-based sauces, smudges, and balsamic vinegars.

 

Chili chocolate steak ‘manwich’ with rocket, mozzarella and herbed mayo. (Serves 6)

Ingredients:

500g matured rump steak

Chilli chocolate balsamic reduction (A Thyme to Dine)

Whole ciabatta bread

100g fresh rocket

50g good quality mayonnaise

50g flat leaf parsley and coriander (finely chopped)

50g mozzarella (grated)

Butter

Salt and pepper to taste

 

 

Method:

Marinade the steak for 30 minutes in the chilli chocolate balsamic reduction. In a hot pan cook the steak to your liking. Slice the whole ciabatta and butter both sides. Mix the mayo and herbs and put on both sides of the bread. Add the steak, mozzarella and rocket. Add salt and pepper to taste. Wrap it up and eat when needed.

 

Quick, easy and healthy mango and yogurt dessert.

Ingredients:

2 mangos (sliced and cubed)

500g double thick Greek yogurt

50g demerara sugar

 

 

Method:

Simply add all the ingredients, and refrigerate until ready to eat.

 

 

Strawberry, haloumi and avocado salad with lemongrass chocolate balsamic reduction.

 

Ingredients:

1 punnet of strawberries

1 avocado

100g haloumi cheese (cut into cubes and pan fried until golden brown)

Olive oil

Lemongrass chocolate balsamic reduction (A Thyme to Dine)

Fresh baby leaf lettuce

 

 

Method:

Quarter the strawberries and cube the avocado and mix together. Add the baby leaf lettuce and halloumi. Mix the olive oil and lemongrass balsamic reduction together and pour over the salad. Refrigerate until ready to eat.
