Give tequila a twist with the Paloma

The Paloma, Spanish for ‘dove’, is a cocktail enveloped in mystery with its origins somewhat blurred in the annals of cocktail history. Some believe it was named after a popular folk song in the 1860s, while others attribute its creation to the inventive spirit of Mexican bartenders.

Despite its unclear beginnings, the Paloma has soared in popularity, particularly in Mexico, and has gained a loyal following worldwide for its refreshing and balanced flavour profile.

  1. Begin by salting the rim of a highball glass. Run a lime wedge around the edge and dip it into coarse salt.
  2. Fill the glass with ice and add the tequila and fresh lime juice.
  3. Slowly pour the grapefruit soda to the top of the glass, allowing it to mix gently with the tequila and lime juice.
  4. Garnish with a slice of grapefruit and a lime wheel.
