Ingredients
2 slices bacon, chopped
3 x 225g packs thin French green beans, trimmed
1 shallot, minced
½ tsp smoked paprika
½ tsp salt
½ tsp ground pepper
2 tsp red wine vinegar
1 tsp lemon juice
Method
1. Preheat oven to 230°C.
2. Arrange bacon in a single layer on a large rimmed baking sheet.
3. Roast until opaque, about 5 minutes.
4. Remove the pan from the oven.
5. Stir in beans, shallot, paprika, salt, and pepper; spread into a single layer.
6. Roast until the beans are lightly browned and tender and the bacon is crisp, 10 to 12 minutes.
7. Stir in vinegar and lemon juice, and roast 2 minutes more.
