Ingredients

2 tbsp sesame seeds
2 avocados, peeled and sliced
200g baby spinach leaves
300g smoked salmon, thinly sliced
Dressing

1/4 cup mirin
1/4 cup reduced-salt soy sauce
1 tbsp caster sugar
2 tbsp vegetable oil
Instructions
Place sesame seeds into a frying pan. Cook over medium heat, stirring often, for 2 to 3 minutes or until golden. Remove to a plate.
To make dressing: Combine ingredients in a frying pan. Heat over medium-high heat for 1 to 2 minutes or until bubbling.
Arrange avocado and spinach on plates. Top with salmon. Drizzle with dressing and sprinkle with toasted seeds and serve.
