Peachy muffins Ingredients 2 cups oats 1½ tsp baking powder 1 tsp mixed spice 3 eggs 2 small ripe bananas, mashed ¼ cup melted butter 1 tsp vanilla extract ¼ cup golden syrup 2 cups finely chopped peaches Method Preheat the oven to 180°C. Spray a 12-hole muffin tin with non-stick spray. Place all the ingredients except the peaches into a bowl and mix well. Stir in the peaches. Spoon the batter into the prepared muffin tin and bake for 25 to 30 minutes or until a skewer inserted into the centre of each muffin comes out clean.
