A balanced diet is a cookie in each hand

Cookies are made with butter and love, and what better way than to spread the love this festive season with Christmas cookies doused in chocolate with a personal touch.

This is perfect as an edible name place setting for guests at your lunch or a nifty gift for your guests to take home after your dinner.

For the cookies, you’ll need:

  • 500 grams of butter
  • One cup of icing sugar
  • One cup of Maizena
  • Four cups of cake flour
  • 250 grams of chocolate (melted) to dip cookies in

For the royal icing:

  • One cup of icing sugar
  • Four teaspoons of milk

Lets bake them crazy!

Preheat oven to 180°C. In a large mixing bowl, cream the butter and icing sugar. For a sweeter cookie, you could add an additional half a cup of icing sugar but also consider that you will be dipping the cookies into chocolate.

Once the butter and sugar mixture turn pale, add in the maizena and then flour gradually. Add enough flour to form a firm dough. Roll out the dough on a floured surface and use festive cookie cutters to cut out the cookies. Bake for 10 to 12 minutes until golden brown. Transfer the baked goodies onto a cooling rack.

While the cookies are cooling down, melt the chocolate using a double boiler.

Dip the top of the cookies flat down into the chocolate. Hack! Place a flat sheet pan under the cooling rack with the cookies and pour the chocolate over the cookies. The chocolate that drips into the sheet pan can then be used to coat the rest of the cookies.

As the chocolate sets, make the royal icing by mixing the icing sugar and milk.

Divide the icing and use food colouring to make different coloured icing. Once the chocolate has set, pipe a message or your guest’s name onto the cookie using a small round piping tip.

Let the icing harden and serve.
