What’s for dinner? Avocado & sweet chilli noodle salad
This recipe is budget-friendly and sure to become a summertime favourite with the family.

You’ll need: 2 avocados, halved and sliced; 200g assorted veggies: mange tout, baby corn, broccoli spears, carrot batons, bean sprouts; 2 chicken breasts, cooked; 200g egg noodles, cooked.
For the dressing: ½ cup sweet chilli sauce; ¼ cup lemon juice; 2 tablespoons fish sauce; 2 tablespoons castor sugar; 2 tablespoons sesame oil.
How to:
Mix all the dressing ingredients together well.
Toss the salad ingredients together in a large bowl with the dressing until well coated.
Serve in bowls garnished with seeds and sprouts.
